Fresh Tasmanian prawns, smoked king salmon mousse over red pepper avocado tian served with seedless lime and local bush honey dressing
Vegetarian option:
Table lands Potato, leek and egg drop tomato bake
with Aussie farms Egmont cheese and reef salt
Main (alternate drop):
Australian mountain pepper seared kangaroo loin served with Jarrahdale pumpkin mash, blueberry reduction and crocodile wonton
Or
Spangled emperor fillet with lemon myrtle seasoning served over crushed Queensland chat potatoes, wilted spinach and tableland pomelo sauce
Vegetarian option:
Bush tomato seared polenta served with Aussie pepperbark smoked mushrooms and fingerlime tomato salsa
To Finish:
Pavlova topped with fresh tropical fruits served with passion fruit coulis and vanilla cream
